Tea Brewing Guide
Dancong (Oolong)
Tea: 5g
Gaiwan: 80-100ml
Temp: 100°c
1) Warm gaiwan with boiling water
2) Guide dry tea into pre warmed gaiwan, give the gaiwan a few good shakes after putting the lid on to “wake” the tea a little
3) Pour boiling water into gaiwan, as much as possible avoid pouring directly on the tea leaves, aim at the inner wall of the gaiwan
4) Strain out the first brew as quickly as you can possibly manage, this will be the rinsing brew (which you can offer to your teapet)
5) 1st - 5th Brew: Pour boiling water into gaiwan and strain out the tea as quickly as you can possibly manage (suggest using a serving/justice cup for beginners),
6) 6th & 7th Brew: Steep for 5 secs before serving,
7) 8th - 10th Brew: Steep 10 secs before serving
8) If you do not mind the tannins, steep for 30 sec for the last brew
Aged Raw Puer (more than 15 years)
Tea: 4-5g
Yixing Teapot/Gaiwan: 80-100ml
Temp: 100°c
1) Warm teapot/gaiwan with boiling water
2) Guide tea leaves into the warmed teapot/gaiwan
3) Pour boiling water into teapot/gaiwan
4) Let the first brew steep for 10-20s (the more loose the leave, the lesser the steep time), dispose this first brew over your teapet
5) 1st & 2nd Brew: 15s
6) add 10s after every brew and enjoy till you taste the water more than the tea, if you controlled the timing well, you should get at least 6-8 good brews easily
